Foreign Language Characters in the admin dosnīt show right even that it use the right danish lang file. hope one can help me on this, becource the letters in the frontpage og the blog shows up right.

I am having the same problem (and possibly a solution). I run a website at:

(OK, small plug, but it's relevant)
The site is largely related to Citroen automobiles, which is properly spelled with an umlaut (..) over the 'e'.
I use ALT-U-E to enter the umlaut-ed 'e', and it looks fine while editing, and in preview, but when the page is viewed, it appears as a bunch of incorrect characters.
I edited the header templates and changed the encoding from ISO-8859-1 to UTF-8.
Now the pages, including the umlaut-e, render correctly.
Is there anything wrong with this solution?
Why is it ISO-8859-1 by default?

The default ( in your case ISO-8859-1) is set by the web server you are on.
